Electricity is also the most ideal choice if the application requires heating, cooling and reheating. In food production and pharmaceuticals, electricity is also the best option because it is cleaner and does not produce any byproducts unlike gas that emits carbon dioxide and water.
Gas
Gas is relatively cheaper than electricity so that it becomes the most ideal choice for high volume production. A gas oven is considerably more expensive than an electric oven but the investment can be offset from the savings in fuel. If the application has high temperature requirements, gas is a very good option because it provides high temperature immediately.
Infrared
Infrared ovens are totally different from the electric and gas ovens because they produce heat through radiation. Radiation heating can heat an object directly with a targeted beam which is a good choice for applications like curing and finishing. However, infrared is not actually a power source but it is generated through electricity or gas. There are electric infrared ovens and gas-powered infrared ovens but the choice has to suitably fit your process and products.
