The modern Baking Trays
The baking tray is a simple item but it can produce a wide range of desserts from cakes to pies including pasta dishes. When baking, the size of the baking tray is usually specified in the recipe so as to prevent the ingredients to spill over the sides or burn around the edges. When choosing the baking tray, it is important to read the recipe including the required temperature to produce a perfectly baked product. In many cases the material of your baking tray will also have an effect on the finished product so check carefully whether the recipe calls for a glass or non-stick baking tray.
How are Baking Trays prepared prior to baking?
The instructions on how to prepare the baking tray is sometimes included in the recipe. Generally, the baking tray may require some greasing with butter or flour while other recipes may call for parchment paper. When greasing the baking tray, different methods may be used that includes using a pastry brush, paper towel or the fingertips to spread an even and thin layer of butter or shortening on the bottom and sides of the tray. When non-stick Baking Trays are used, preparation is different because it usually does not call for greasing. If you are using a Bundt pan, make sure to apply butter or shortening on all the creases and flutes before pouring in the batter.
How to line a baking tray with parchment paper
To ensure that parchment paper is cut to an exact fit, invert the baking tray and press the parchment paper or wax paper around the edges to form a crease. Cut the paper along the crease and press it on the bottom of the greased tray. Take note that the recipe may call for greasing on the bottom of the tray even if you are going to use paper. Always follow the instructions on the recipe to produce the best possible results.
Aluminum foil baking trays
Recent developments in the manufacture for baking equipment have given rise to the aluminum foil Baking Trays that are disposable. Many bakers prefer the aluminum baking tray because they do not have to transfer the baked product into another plate or tray for a customer. Bakeries do not have requirements for the aluminum foil baking tray to be returned inasmuch as it is inexpensive and ideal for take-outs. However, it requires the expertise of bakers to ensure that they use the right oven temperature so that the baked product will not be overcooked or burnt. While aluminum foil baking tray is sturdy enough for the batter, it is not as thick and durable as other materials like glass, stone or silicone.
