Free radicals

The reason for this is because they have an unpaired electron which does most of the damage in the search for a mate. When a free radical will encounter an unsaturated fat molecule in the flour, it will immediately oxidize that molecule and cause it to split in two or more new free radicals. Each will go on and make more free radicals.
Exponential damage brought about by free radicals
Similarly, when the free radical will encounter sensitive tissues like arterial lining, they will cause oxidation during the point of contact, thereby producing more free radicals. The newly produced free radicals will even produce more of its kind. This will continue exponentially until the process will be stopped and checked by an anti-oxidant like the vitamin E.
